Japanese Soufflé Pancakes

Light, fluffy, melt-in-your-mouth pancakes, these are my go to recipe! They make 1-2 servings, depending how hungry you are.


Ingredients:

- 2 eggs

- 4 tbsp flour (37g)

- 4 tbsp milk (60g)

- 2 tbsp sugar (25g)

- 1 tsp baking powder

- 1 tsp vanilla extract


Instructions:

  1. Separate the egg yolks from the egg whites.

  2. In a large bowl, add in the egg whites and sugar, whisk until the whites form stiff peaks

  3. In a separate bowl, combine the egg yolks and the rest of the mixture. Mix thoroughly until there are not lumps

  4. Gently fold the egg whites into the egg yolk mixture in thirds.

  5. Scoop 1/4 cup size batter on a nonstick pan (or one with butter/oil) and low heat, cook approximately 2 minutes on each side.

  6. Serve with maple syrup, a dusting of powdered sugar and butter; enjoy!
